Great burgers don’t need a long ingredient list. They need serious heat.
In this cook, Jeremiah from Spider Grills pushes the Venom® all the way to 550°F to find out how hot it can really go. The answer: hot enough for a deep, crusty sear in just a few minutes per side. With generously salted patties, a melty slice of cheese and a toasted brioche bun, it’s a backyard classic done right, with the Venom® and the Spider Grills app handling the fire and the timing.

How to Grill High-Heat Burgers
1. Light the Charcoal
Light charcoal in a chimney starter. Once it’s going, pour the lit coals into the grill.
2. Set the Venom®
Set the Venom® to 450°F in the Spider Grills app, then add more charcoal so the grill has enough fuel to reach and hold a high temperature.
3. Season the Patties
Season the patties generously with chunky Celtic sea salt, then add a layer of Bob’s Southern BBQ Smokin’ Seasoning.
4. Crank It to 550°F
Raise the Venom® set point to 550°F in the app and let it lock in. The Venom®’s fan drives the coals to maximum heat on its own.
5. Sear the First Side
Place the patties on the grill and cook for about 3 minutes. Set a timer in the app so you know exactly when to flip.
6. Flip Once
Flip the patties one time and cook for about 2–3 more minutes.
7. Add the Cheese
Lay a slice of cheese on each patty and cook for about 30 more seconds, until it melts. If the burgers are cooking too fast, move them off the hottest spot.
8. Toast the Buns
Toast the brioche buns on the grill while the cheese melts.
9. Build and Serve
Pull the burgers and buns off the grill and build your burgers with pickles and ketchup.
Tips for Better Charcoal Grilled Burgers
Keep it simple. Quality beef, salt and a good seasoning are all you need. Let the fire do the rest.
Be generous with the salt. Chunky sea salt seasons the outside and helps build that crust.
Flip only once. Leaving the patties alone lets them develop a deep sear. Constant flipping slows the crust and dries out the meat.
Use the app timer. At 550°F, burgers cook fast. A flip reminder in the Spider Grills app keeps you on track.
Watch your hot spot. The center of the fire runs hottest. Move burgers toward the edge if they’re browning faster than you’d like.
What’s the Best Temperature for Grilling Burgers?
Jeremiah usually grills burgers around 450°F, which gives a great sear with a little more margin for error. Going to 550°F shortens the cook and builds an even deeper crust, as long as you keep a close eye on timing. With the Venom®, you can choose either temperature and trust the grill to hold it.
How Hot Can the Venom® Go?
The Venom® uses a variable-speed fan to feed oxygen to your charcoal, raising or lowering the fire to match your target temperature. In this cook, it reaches 550°F with fan power alone, no extra vents or tricks required. That makes it as capable for high-heat searing as it is for low-and-slow smoking, all controlled from your phone.
Burger FAQs
How long do you grill burgers at 550°F?
About 3 minutes on the first side and 2–3 minutes after flipping, plus about 30 seconds to melt the cheese. Exact time depends on patty thickness.
What internal temperature should burgers reach?
The USDA recommends cooking ground beef to 160°F. Use an instant-read thermometer in the center of the patty to check.
Should I flip burgers more than once?
No. Flipping once gives you the best crust and keeps the burgers juicy.
What kind of charcoal is best for high-heat grilling?
Lump charcoal burns hot and responds quickly to airflow, which makes it a great match for high-heat cooks with the Venom®.
