The Setup
For this recipe, we used:

The NextLevel system helps create more indirect, even heat across the cooking surface, making it ideal for baking applications on a charcoal grill.
Ingredients
- ¾ Cup Sunrise Flour Mill cornmeal
- ¾ Cup Sunrise Flour Mill whole wheat pastry flour
- 1 Tbsp baking powder
- 1 tsp salt
- ¼ Cup sugar
- ¾ Cup whole milk
- 1 egg (beaten)
- 2 Tbsp melted butter
Instructions
- Start the lump charcoal using a Jealous Devil Boom starter in the middle of the Huntsman™.
- Set the Venom® controller to 350°F.
- Close the lid and set the top vent to ¼ open.
- Mix the cornmeal and flour together.
- Add baking powder, salt, and sugar.
- Stir in the beaten egg and milk.
- Add melted butter and mix thoroughly.
- Pour the batter into a lined muffin tin using a ¼ cup measuring cup.
- Install the NextLevel cooking system and allow the grill to stabilize at 350°F.
- Place the muffin tin directly onto the grate.
- Bake for 25–35 minutes until a toothpick comes out clean.
- Top with maple syrup, honey, or agave and serve warm.
