Smoked Cornbread Muffins on the Huntsman

The Setup

For this recipe, we used:

  • Jealous Devil Boom Fire Starter

The NextLevel system helps create more indirect, even heat across the cooking surface, making it ideal for baking applications on a charcoal grill.

Ingredients

  • ¾ Cup Sunrise Flour Mill cornmeal
  • ¾ Cup Sunrise Flour Mill whole wheat pastry flour
  • 1 Tbsp baking powder
  • 1 tsp salt
  • ¼ Cup sugar
  • ¾ Cup whole milk
  • 1 egg (beaten)
  • 2 Tbsp melted butter

Instructions

  1. Start the lump charcoal using a Jealous Devil Boom starter in the middle of the Huntsman™.
  2. Set the Venom® controller to 350°F.
  3. Close the lid and set the top vent to ¼ open.
  4. Mix the cornmeal and flour together.
  5. Add baking powder, salt, and sugar.
  6. Stir in the beaten egg and milk.
  7. Add melted butter and mix thoroughly.
  8. Pour the batter into a lined muffin tin using a ¼ cup measuring cup.
  9. Install the NextLevel cooking system and allow the grill to stabilize at 350°F.
  10. Place the muffin tin directly onto the grate.
  11. Bake for 25–35 minutes until a toothpick comes out clean.
  12. Top with maple syrup, honey, or agave and serve warm.
