Prime rib at the Next Level
I finally took the leap to the Next Level kit and am really glad that I did. Last year I cooked a 7 pound prime rib on the Huntsman and it came out good, though I did have to be really careful about too much direct heat over-cooking the roast. I recently cooked a 6.5 pound prime rib with the Next Level and had the ability to insulate the roast from direct heat through the majority of the cook. Then I removed a ceramic insert and seared the roast over hot charcoal for the most amazing prime rib. 130 degrees with pink meat from coast to coast with no gray banding and an amazing crust. Great deflectors
Bought this for my huntsman, and the deflectors work great. Cooking chicken or pork loins over the deflector allows for the indirect low-slow style cooking, and then if you have the grate installed on the other side, you can move things over to that half to get the sear/color/texture you want. This is a must have!
