Sizzle & Smoke: Indirect Seared NY Strip on the Huntsman Grill

There’s something special about a perfectly cooked NY Strip over real charcoal. In this episode of Sizzle & Smoke, we’re using the Huntsman™ Grill to create a steakhouse-quality crust with a simple indirect cooking setup that delivers incredible flavor, even cooking, and a juicy finish every time.

With the precision control of the Huntsman and the rich flavor of lump charcoal, this cook proves you don’t need complicated techniques for amazing steak. Just real fire, quality ingredients, and a little patience. 🔥🥩


What You’ll Need

  • 1 NY Strip Steak
  • Jealous Devil Lump Charcoal
  • Salt
  • Optional: Beef tallow for enhanced crust and richness

How to Make It

1. Load the Huntsman Grill

Fill your Huntsman with Jealous Devil lump charcoal and light your fire.

2. Bank the Coals to One Side

Arrange the charcoal on one side of the grill to create an indirect cooking zone. This setup allows the steak to cook evenly without direct flame exposure.

3. Bring the Steak to Room Temperature

Let your NY Strip rest at room temperature for at least 30 minutes before cooking.
This helps the steak cook more evenly and prevents cold spots in the center.

4. Season Simply

Generously season the steak with salt on all sides. Sometimes simple is best.

5. Place Steak on the Indirect Side

Set the steak on the grill grate opposite the charcoal bank. Close the lid and let the Huntsman work its magic.

6. Cook Until Desired Temp

Cook the steak until it reaches about 120°F internal for a final medium-rare finish around 130°F after resting.

7. Optional Pro Tip: Beef Tallow

For an extra decadent crust, brush a light layer of beef tallow onto both sides of the steak during the cook.

8. Rest the Steak

Remove the steak from the grill and let it rest for up to 10 minutes.
This allows the juices to redistribute while the steak finishes cooking.

9. Slice & Enjoy

Slice the steak against the grain and serve immediately.
